Summer Fruit Ambrosia with Vanilla Nut Cream

Use any fresh berries or other seasonal fruit.  This little combo is so simple and yet extraordinarily delightful.

cup thawed orange juice concentrate
2 tablespoons sugar

1 cup blueberries
1 cup sliced
apricots (3-4)
1 cup fresh
raspberries

Nut Cream:

cup raw, unsalted cashews
3 tablespoons maple syrup
2 teaspoons vanilla
Water

Combine orange juice concentrate and sugar in a medium bowl. Add blueberries, apricots, and strawberries tossing gently.

Grind nuts to a fine meal (no lumps or there will be lumps in your nut cream) in a small grinder.  I like to designate a coffee grinder for nuts and spices, never put coffee in it.  Put ground cashews, maple syrup, and vanilla in the blender.  With blender running, add water a little at a time until you have a thick creamy consistency.  

Spoon dressed fruit into each of 4 glasses; top with Nut Cream or layer the fruit and nut cream like we did in the video.

Preparation time: 10 minutes
Makes 4 servings

Yes you can replace maple syrup with agave but agave is sweeter so use less. Also I like the maple flavor with the cashews, and agave is not as unrefined as one might think.

bryant terry in his peaches and cashew cream recipe in vegan soul food cooking...says to soak the cashews overnight in water....seems to make a thick creme of a different sort...but tasty, too. hope that cynthia got some new batteries in her fan! and ditto on why does jane have vanilla in her purse???
