Soba Noodles

Soba noodles are made from a combination of wheat and buckwheat flour. You can also purchase 100% buckwheat soba noodles which are fine for gluten intolerant folks since buckwheat is not a relative of wheat and has no gluten content.

There are many good brands.
Eden Foods is one of my favorites. They make several varieties of soba. Wild yam soba has (duh) wild yam added which is an herb thought to promote longevity.  It adds a light tender quality to the noodle.  Mugwort soba is sort of olive green colored and has mugwort added which is an herb thought to support the female reproductive system.

Best to follow package instructions to cook them. They usually only take about 7-9 minutes of dancing in boiling water.


We love serving soba noodles with Coconut Peanut Sauce, Lemon Tahini Sauce, Sesame Chile Dressing or use them to make Asian Noodle Salad.  How do you use your noodle?

Just found your site, and as a vegan, I'm loving your recipes. I just made your pan-fried tofu today. Delicious! I wanted to point out that Soba is Japanese for buckwheat, not noodle. Thanks again for the amusing and enlightening videos!

Hi Lee, Cook soba noodles just like you would any other pasta. Follow the directions on the package as the cooking time varies from brand to brand. Add salt to the water. I would wait until noodles are cooked before adding any oil. In this case, to keep with the culture, Id use toasted sesame oil a few drops will do.

Do buckwheat noodles normally shrink in size while cooking during their allotted time? I'm new at this and would love to be able to finally eat pasta.

Hi Betty, Buckwheat noodles act like most pastas and expand some when they are cooked.The 100% buckwheat noodles (gluten-free)have a strong taste and are a much tougher texture than the soba noddles made with some wheat flour included.
