We grind our own grain and would love a really good soba noodle recipe!

Just found your site, and as a vegan, I'm loving your recipes. I just made your pan-fried tofu today. Delicious! I wanted to point out that Soba is Japanese for buckwheat, not noodle. Thanks again for the amusing and enlightening videos!

Hi Lee, Cook soba noodles just like you would any other pasta. Follow the directions on the package as the cooking time varies from brand to brand. Add salt to the water. I would wait until noodles are cooked before adding any oil. In this case, to keep with the culture, I’d use toasted sesame oil – a few drops will do.

Do buckwheat noodles normally shrink in size while cooking during their allotted time? I'm new at this and would love to be able to finally eat pasta.

Hi Betty, Buckwheat noodles act like most pastas and expand some when they are cooked. The 100% buckwheat noodles (gluten-free)have a strong taste and are a much tougher texture than the soba noddles made with some wheat flour included.
