Romaine Chop Salad with Creamy Basil Dressing

This is a fun vegetarian main dish.  Heartiness is provided by egg, cheese and chickpeas.  Chopping ingredients to a similar size gives the salad an even look and integrated flavor.  Serve with Rosemary Red Soup or Lemon and Herb Roasted Chicken.  Recipe reprinted from Feeding the Whole Family by Cynthia Lair (Sasquatch Books, 2008).

Dressing:

2 cloves garlic
1 teaspoon Dijon mustard
1 teaspoon honey
3 tablespoons brown rice vinegar
cup extra-virgin olive oil
1/3 cup fresh basil
Salad:
1 hard-boiled egg
head Romaine lettuce

cucumber

1/3 cup chopped red onion
1 large or 2 small ripe tomato
cup cooked chickpeas
1/3 cup crumbled blue cheese

Place garlic, mustard, honey and vinegar in a blender and blend well.  With the blender running, slowly pour in olive oil.  Once the oil is incorporated, add basil and pulse a few times to blend in.

Break apart lettuce leaves and wash in a sink of cold water.  Stack leaves on top of each other.  Bisect the stack with a knife then begin chopping into ~ 1-inch squares.  Place chopped lettuce in a salad spinner and spin dry.  Put lettuce in a salad bowl.  Dice cucumber, red onion, tomato and peeled egg into small pieces and add. Add chickpeas and blue cheese. Pour dressing over the salad and toss well.  Serve immediately.

Preparation time: 15-20 minutes
Makes 4 servings

We made this tonight and it was really good. My wife had an avocado on the counter so she put that in the dressing. The dressing was not so green, but creamy and still wonderful.

that is just wonderful ..dear aildes, if possible, please add some more recipes that uses sweet potatoes. We have farm over here in Kerala and when sweet potatoes are in season, the only thing that we make is mashed potatoes.the potato fingers in ur show turned out to be wonderful and I am just wondering what more to make with it other than just getting mashed.thanks again aildes and all the best to all the future videos ..take care

Great salad! While I was profoundly depressed about having to cut out the blue cheese, I've recently developed a problem with dairy, so I added some chopped smoked salmon in for extra protein. It was delicious!
