Chickpea, Carrot and Broccoli Indian CurryRecipe reprinted with permission from Feeding the Young Athlete by Cynthia Lair with Scott Murdoch, Ph D, RD (Moon Smile Press, 2002)
Serve this super-nutritious, super-tasty curry dish over rice with a green salad on the side and raita (yogurt topping) and you have a pre-game meal fit for a king.
2 teaspoons ghee or extra-virgin olive oil 1 onion, chopped 1/2 teaspoon sea salt 1 clove garlic, minced 1-2 teaspoons ground coriander 1-2 teaspoons ground cumin 1 teaspoon turmeric 1/2 teaspoon cinnamon pinch of cayenne 1 small potato, cut in chunks 1 carrot, sliced 1 cup tomato sauce 1/2 cup water 1 cup cooked chickpeas 1 cup broccoli flowerettes Garnish: Raita Yogurt Topping Heat oil in a large pot. Add onion and salt; sauté until onion is soft. Add garlic, coriander, cumin, turmeric, cinnamon and cayenne. Use the larger amount of spice for a stronger curry flavor. Add potatoes, carrots, tomato sauce, and water; stir well. Bring to boil, lower heat and simmer, covered, until potatoes and carrots are tender, about 20 minutes. Add cooked chickpeas and broccoli; stir in gently. Heat until broccoli is bright and tender ( a few minutes). Serve over rice and garnish with raita on top.
Preparation time: 30-35 minutes Makes 4 servings |

Couldn't be easier...fast, fresh, and so fun to make the curry blend! We kept it on the mild side so that our toddler could enjoy it, too. Next time, we'll make an adults-only version iwth a bit more cayenne, cumin and coriander. My husband, a confirmed meat-and-potatoes dude, gave this rave reviews. Loved it with the raita!

It looks like I'm just going to have to leave a comment after every dish I make. This was SO GOOD. The raita added a lot of flavor and contrast- don't make this without it. Yum!

Yum! The yogurt dressing really makes this meal. I love it! We had some leftover eggplant that I added, which was also good. Love this website. Thanks

The raita with the curry was so great- I didn't expect to like it as much as I did. It is added to the permanent recipe book :)
