Homemade Cinnamon Applesauce

Recipe reprinted with permission from Feeding the Whole Family (third edition) by Cynthia Lair (Sasquatch Books, 2008)

There are many excellent brands of jarred applesauce but there is nothing quite as satisfying as freshly made applesauce from seasonal apples.  Perfect for all ages.  I like to make this fruit sauce with Italian plums or pears in the fall.

2 cups sliced apples
1/3 cup apple juice or apple cider
1 stick cinnamon
1/8 teaspoon sea salt
Unrefined cane sugar or brown sugar

Place cut up fruit (yep it's ok to leave the peel on if the apples are organic), juice, cinnamon, and salt in a pot.  Bring to a boil, reduce heat, and simmer, covered until fruit is tender and the liquid has cooked off (about 15 minutes).  
You can also make this in a pressure cooker.  Follow the directions above but after the cooker comes up to pressure, set the timer for 5 minutes.

Taste the sauce.  If you feel it needs to be sweeter, add a teaspoon or two of unrefined cane sugar and reheat, stirring constantly, until it dissolves.  Remove cinnamon stick, puree in the blender or mash with potato masher, depending on whether you want a smooth or chunky consistency.

I like apple butter and take the applesauce this one step further by baking it in a 375 degree oven (stirring it every 30 minutes) until it is the consistency I'm looking for. Depending on the amount of liquid in the applesauce, this can take up to several hours.
