Fried Brown Rice with Peas and Currants

Recipe reprinted with permission from Feeding the Young Athlete by Cynthia Lair (Moon Smile Press, 2002)

Brown rice is an excellent carbohydrate to use to fuel up athletes of all ages.  You can transform ordinary brown rice into a more appealing and nutritious dish by adding sautéed spices and vegetables. White rice can be substituted.

2 tablespoons butter, ghee or olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
Pinch of cayenne (optional)
¼ cup pine nuts or cashews (or tamari-roasted nuts
)
2-3 scallions
1/4 cup dried currants
1/3 cup frozen peas

3 cups cooked  brown rice

Heat butter in a large skillet over low to medium heat. Add spices and nuts and allow them produce a fragrance, the nuts changing to a golden color (if not already toasted).  Add scallions and sauté until bright green. Add currants and peas and sauté a minute or two more.  Slowly add rice, breaking it up so it gets evenly coated.  When all the rice has been added, flatten out in pan.  When the bottom has browned slightly, turn rice and repeat. Serve once rice is evenly heated.

Makes 4-6 servings
Prep time: 15 minutes

I love this show! I don't know if I'm just TV deprived--I haven't had a TV for 2 years--but it totally makes me laugh and makes me want to cook healthy meals at the same time! Keep them coming.

This is YUMMY! I stirred in a little leftover shredded cooked chicken breast and, with a salad, had a totally satisfying meal.

Ohhhhkay. I'm in love with this fried rice. My version added 2 cloves of garlic, leftover chicken scraps instead of nuts, broccoli instead of peas and goji berries in addition to raisins (my 3 yr-old son has been experienceing photo-sensitivity lately. SO wonderful, even my son loved the full batch! I think we watched the video, like, 12 times...Thank you!

Leah, Can't think of a substitute for cumin. You might chuck the whole Indian spice thing and go with garlic and oregano instead.
