Using the edge of a regular table spoon, peel skin off the ginger. 
Once all of the peel is off, grate it by using a ceramic ginger grater or a microplaner, both available from the Cookus Store.

Hi Cynthia, I was wondering how to properly store ginger to extend its shelf life? What is its shelf life? Also, every time I grate ginger, it gets stringy. Do you have any solutions for that? Thank You! Si

Si, To prevent stinginess peel the ginger and grate it with a microplaner using the flat end of the stem (not the side). Sliced ginger can be stored in sherry in a jar in the refrigerator where it will keep for quite a while. Cynthia
