Yummy Yam Frosting Reprinted from Feeding the Whole Family by Cynthia Lair (Sasquatch Books, 2008)
This naturally sweet, beautiful golden-orange frosting comes from the creative mind of Rita Carey. Use it to top cookies, cupcakes, quick breads, graham crackers or gingerbread people or our Pumpkin Pecan Muffins. This recipe makes enough to frost two dozen cookies or a one-layer cake.
1 cup mashed baked yams ¼ cup softened cream cheese* 1 tablespoon melted unsalted butter 2 tablespoons maple syrup or agave nectar 1 teaspoon lemon or orange juice
Place yams, cream cheese, butter, syrup and juice in a bowl and cream together. Puree this mixture with a hand mixer or in a food processor to a smooth, spreadable consistency.
Preparation time: 5 minutes Makes ¾ - 1 cup frosting
FOR BABIES 6 MONTHS & OLDER: Reserve some extra baked yam. Mash well and serve. * vegans can substitute 2 ounces of silken tofu |

Well... I MEANT to frost my pumpkin muffins with this. Sadly - my husband ran out of the room with the bowl, a spoon, and a muttered 'Mine!' tossed over his shoulder as he took his prize to his office. I think I can safely assume this is a repeat recipe to tuck into the arsenal! Thanks.
