Lime Boost A Cookus Interruptus exclusive. Copyright 2008, C.Lair.
This little syrup is very handy to keep around. Works beautifully in marinades for fish (Caribbean Lime Halibut or Fish Tacos) or chicken, salad dressings (Nappa Cabbage Slaw), Thai or Mexican dishes, anything where you want a sweet citrus flavor. Pour a tall icy glass of mineral water and throw a splash of this in for a refreshing summer drink. I also encourage athletes to use this to flavor drinking water. Santa Cruz organic lime juice is a perfect product to use.
16 ounces (2 cups) lime juice 1 ½ cups sugar
Place lime juice and sugar in a pan and bring to medium low heat. Allow mixture to simmer for about 10 minutes until it thicken slightly and all sugar is dissolved. Remove from heat and let cool. Pour into a clean jar with a lid and store in the refrigerator.
Preparation time: 10 minutes Makes 2 cups |

This will keep for months. The only thing that would spoil it is some type of outside contamination - dirty spoon? - getting in the jar.

I have been doing something similar this summer only I use maple syrup and I don't cook it. 4 parts lime juice to 1 part maple syrup add to sparkling mineral water to your taste. I use a 2 quart canning jar...place 3/4 lime juice, 1/4 cup syrup, ice, fill to top with sparkling water.

One teaspoon of the lime juice has 0 calories and one teaspoon of sugar has 15 calories. I'd guess one tablespoon of lime boost has about 30-35 calories.

I was flown to hawaii recently to cater a dress-rehersal brunch for 45 people. I had 20 gallons of drinks (5 gallons each) and the Lime Boost was finished first. All the guests were hungover and they drained the Lime Boost over the water and booze. It rehydrated them and prepared them to eat a fabulous brunch. Much love Cookus!!

OBTW, i used 10 limes, 8 lemons, 6 Santa Cruz Limeades, and 10 pounds of ice in a 5 gallon cooler. No sugar added. Its a great hangover drink in the summer.
