Fried Tempeh

Tempeh has been a staple food in Indonesia for hundreds of years.   Soybeans (or a combination of soybeans, grains & seeds) are dehulled, soaked overnight, then cooked 45-60 minutes.  A culture called Rhizopus oligosporus (mold spores) is added, mixture is packed in special bags and incubated on trays at about 86-88 degrees for 24 hours.  The result is a 3/4 inch thick cake or patty.
 

Tempeh can be purchased frozen or refrigerated.  Look for dense, uniform cake with mushroomy aroma.  Gray or dark spots are normal sporulation and do not indicate spoilage.  Refrigerated, tempeh will keep 1 week, frozen - months.  Allow 1 hour to thaw.

It contains 19.5% protein; including all eight essential amino acids.  The fermentation process makes it highly digestible.  It is a possible but unreliable source of B12. Most tempeh manufactured in the States is in an environment too clean to spawn B12.

2 tablespoons coconut oil
1 8-ounce package
tempeh, cut into 1/4" strips

Heat coconut oil in a 10-inch skillet on high heat.  Place half of the tempeh strips in the skillet and let them quick-fry, turning them so that both sides brown.  Remove fried tempeh onto a paper towel and repeat the process with the other half of the tempeh strips.  Set aside.

You can use the fried tempeh as you would meat – added to stir fries, salads, curry dishes.  Makes a nice TLT sandwich too.


Preparation time: 10 minutes
Makes about 25-30 strips

In the past I've made a shish-ka-bob with squares of marinated tempeh, mushrooms, onion, squash, peppers, and cherry tomatoes on skewers that were grilled. I think they are quite good.
