I made this dish (again) last night. It is very tasty. I served it with the Nappa Cabbage Slaw (video and recipe on our site)with these variations: leave out the tamari and toasted sesame oil and almonds. Add a pinch of cumin and chili powder to the dressing. Include ripe avocado slices and toasted pumpkin seeds in the salad. The slaw easily transitions from Asian to South of the Border. Bueno!

Your video is awesome! I love that it's a family affair. I want substitute tomato sauce with veggie broth and tomato paste. What ratio of broth/paste would you recommend?

Bonnie, The tomato flavor is pretty important. I'd use 4 ounces of tomato paste and 1 1/2 cups broth.

Sonya, I like to take the Nappa Cabbage Slaw recipe, leave out the toasted sesame oil and replace it with a chili oil or more olive oil. Add ½ teaspoon cumin to the dressing. Use toasted pumpkin seeds instead of toasted almonds. It’s refreshing next to the mole.

Cynthia - my boyfriend is allergic to chocolate but he would LOVE this dish! What do you think of substituting Carob for the chocolate?

Jessica, I've never tried carob but it might work. Let me know if it does. Carob tends to be sweeter than dark chocolate so you may want to lessen the amount of sugar added.

Thank you, Cynthia! Made this last night and it was delicious! It's so easy and tasty, I will definitely be making it again with two changes - season the chicken with salt and pepper before pouring sauce over and remove the tin foil about 3/4 into cooking so some of the water evaporates in the sauce (seems the tinfoil trapped the moisture and made the sauce a little watery).
