I want to use my pressure cooker to cook my soaked beans for the Three Sisters Stew. Instead of soaking a cup, I soaked 1 pound. Should I still add 2 cups water to the pressure cooker and cook for 45 minutes? Is there a rule of thumb for water to soaked beans in a oressure cooker? Thanks.

Angela,
You will need to estimate how many cups of dry beans were in your 1 pound. Then use 2 cups of water per 1 cup DRY bean in the pressure cooker. Careful not to fill the pressure cooker more than halfway full.

Does anyone know if the little boxes inside the lunch box kit come with lids for all? Just wondering how different foods do after being tossed around by kids all morning.

There is a lid for only one of the containers and a tiny lid for the dressing/sauce container. Kind of a bummer, but still a great lunch kit over all. Food stays in place (generally) unless kids REALLY kick it around. I try to pack things that don't ooze or drip in the lidless containers.

This from one of the creators of laptop lunchboxes:
The outer container acts as a lid for the inner containers, so foods stay in place. However, wet foods like yogurt or applesauce should be packed in the water-tight container. We've got some lunch menus with photos posted at http://www.laptoplunches.com/lunchmenus.html, showing which foods work well in which containers.

I was wondering if you have any good eggplant recipes? I have about 8 Japanese eggplants from my garden that I don't want to waste.
