They’re cheese quesadillas

Yup.  That long list of ingredients turns out to be simple cheese quesadillas school-lunch-ized.  I make quesadillas with a sprouted whole wheat tortilla, some grated cheese, cilantro and jalapenos plus a little oil or butter for the pan.  Stunning how such a simple dish can be made so complicated….

  1. Do you actually send them as a school lunch? And are they consumed cold? We eat a lot of quesadillas (homemade corn tortillas, refried pinto beans, grated cheese), and one of my kids professes a deep hatred of peanut butter sandwiches, so I wish I could send them for lunch. (BTW, more lunchbox ideas, please!)
