Aromatic Baked Apples with Raisins and Walnuts

Adding heat to fruit intensifies the sweetness while creating a dessert that remains whole and simple.

2 Honeycrisp or Fuji apples

3 tablespoons
raisins
3 tablespoons walnuts, chopped
teaspoon ground cinnamon
teaspoon freshly grated nutmeg
1 tablespoon unrefined cane sugar or brown sugar
cup apple juice
1 teaspoon butter

Preheat oven to 350 degrees F.  Wash apples and remove core with a melon baller without puncturing the blossom end.  Using a carrot peeler, take off a piece of skin round the top next to the core to prevent bursting while they bake, but retain shape.

Place apples in baking dish.  In a small bowl mix raisins, walnuts, spices and sugar.  Stuff each apple with raisin mixture, pour juice evenly over the apples.  Top each apple with a dab of butter.  Bake 45-55 minutes, until tender when a sharp knife is inserted.  Be careful not to overbake or skins will split.

Serve 1/2 warm apple topped with with heavy cream, whipped cream or Vanilla Nut Cream (dairy-free and magnificent).

Preparation time: 45 minutes
Makes 4 desserts or snacks

I'm making these right now! Four of them heading into the oven as soon as I find the apple juice in the pantry...
